About Echo & Rig


Echo & Rig believes you deserve value & quality - always. We are your neighborhood steakhouse and butcher shop always offering culinary experiences with best-in-class steaks & ingredients and without unaffordable prices.

Echo & Rig’s origin story is a true mix of femininity and masculinity.

Echo: the nymph who masterfully distracted the queen for Zeus though was ultimately caught and made to only repeat.

Rig: the power of mankind. While this is an abstract story, we interpret it through a beautiful pairing of our cuts of steaks that we source from our purpose-driven farming partners from around the world - such as Cape Grim in Tasmania and Creek Stone in Kansas.

Guests will always enjoy a selection of cuts, of finishes and of entrees. From classic butcher cuts to more selective, we know how to cut them and it’s the top two and a half percent of all beef graded by the USDA. We want to always give your option & show you that there are different ways to eat a steak.

About Chef Sam Marvin


Chef Sam Marvin is the Owner and Executive Chef of Echo & Rig Steakhouse in Las Vegas, Henderson and Sacramento.

A California native with serious classical French training, Chef Sam earned his cooking stripes working in top-rated Michelin star restaurants. He previously owned and operated Bottega Louie in Downtown Los Angeles, before branching out with his own brands in Las Vegas and Sacramento.

His Las Vegas Echo & Rig restaurant was named LV Weekly’s “2021 Best Las Vegas Steakhouse.” Chef Sam competed in Food Network’s cooking competition, Beat Bobby Flay, and earned a prestigious win.

About Our Butcher Shop


In addition to our steakhouse, Echo & Rig proudly houses a butcher shop, full of high-quality cuts available directly to our guests to take home and enjoy.

Chef Sam Marvin has travelled the world to visit ranches and farms, meeting with the teams who are raising the best cattle. Our butcher shop serves a range of cuts, including limited edition beef from Cape Grim and Robbins Island, Tasmania, home to the “cleanest air in the world”.
